Since higher activities are not naturally found, some other companies artificially achieve their higher Manuka activity levels and knowingly represent them in a misleading fashion. The abnormally high activity level is commonly obtained through intentionally manipulating the honey, such as exposing it to harmful high heat and cold temperatures, which KILLS the beneficial bee enzymes in the process as well as denaturing the vitamins, minerals and nutrients. As a result, their Manuka honey cannot be 100% unpasteurized (raw), since it becomes either somewhat or fully pasteurized.
